There is a long video of fightingstyle of a probable broken wrist which shows a lot of the aftermath with the other fighter and the referee attending the injured fighter.
Another video of this producer has a suspected torn ACL, but in this case the camera cuts away very quickly as the poor girl is in horrible pain.

Other than that I only know about scripted, fake injuries like Hollywood in Steel Kittens SK-85
